Recipe: Wild Salmon Tartare

There’s nothing quite like savouring freshly caught wild salmon and this delicious recipe from the Danish hunting and cooking duo, Walk on the Wild Side, is the perfect dish for fish lovers.

Taken from their brand new recipe book for fishers, hunters and lovers of wild game, the dish looks and tastes incredible, yet is simple to make.

Serves: 6-8 (as appetizer).
Prep Time: 5 minutes


Remove the skin from your fish and chop it as finely as possible. Next chop the red onion, capers and parsley and add all the ingredients to a bowl.

Now, stir all the ingredients in the bowl, add the mustard, tabasco, Worcestershire sauce and lemon juice and it’s done!

All that’s left is to serve the tartare on grilled bread, pour a glass of chilled white wine and enjoy the results.



For the tartare:

600g fillet of wild salmon or sea trout
1/2 red onion
1 tsp capers
1 tsp dijon mustard
Two dashes of Worcestershire sauce
A dash of tabasco
The juice from one lemon
A handful of finely chopped parsley
Salt and Pepper

Optional serving suggestions:

Chilled white wine
